Did you know there is a nutrition and cooking Pinterest just for UC Davis students? You can follow us at Pinterest.com/ucdteachingkitchen to find new recipes, kitchen hacks, nutrition information and more! (PS: you don’t even need to create your own Pinterest account to view our fun pins - but we recommend it!) Here is a full day of easy and affordable meals based on pins from our Pinterest board!
Breakfast
Easy Yogurt Overnight Oats
When I clicked on this pin, checked the ingredients and saw they only needed 5 minutes to prep, I knew I had found my breakfast. A simple click on the image took me to a food blog (www.shebakeshere.com) with even more simple, sweet recipes.
Morning Snack
17 Power Snacks
I wanted a snack that I could make ahead of time and last a few school days. With a list of 17 snacks, I knew I would find something. The recipe for Perk-Me-Up Trail Mix asked for vanilla sugar almonds, but I used regular almonds instead as they’re what I have in my cabinet- still super tasty!
Lunch
Adult Upgrades on our Fave School lunches
This pin took me to a slideshow article. I quickly found the “See Full List” link at the bottom so I didn’t have to click 30 times to see the food. The bento box lunch and mason jar pesto pasta (reminiscent of Lunchables and Chef Boyardee) caught my eye. The picture of the pesto pasta was very clear, and I could pretty easily figure out what ingredients I needed just from looking at it. I also love anything with pesto.
Afternoon Snack
Apple Chips in the Microwave
Without Pinterest, I either would have spent too much money on pre-made apple chips or attempted spending over 2 hours baking them in the oven. Since most of my money has been spent on textbooks and all of my time is spent reading them, this was the perfect quick-make snack to mix it up from regular apples. I even sprinkled on some cinnamon!
Dinner
10-Minute Spicy Tuna Melts
These look SO good and only take 10 minutes? And the ingredients are all listed on the pin? I was sold.
Dessert
Healthy Peanut Butter Mug Cake
I’m a fan of the desserts in a mug trend. Dessert portion size is guaranteed to be perfect for one person, and the ingredients here were flexible so I could choose what I wanted or had in the cabinet.
